Keto Pancakes

Ingredients:

2 eggs

2 oz cream cheese

2 Tbsp butter

1/4 C Heavy Cream

1/4 C Almond Flour, Blanched & finely ground

2 tsp Sweetener, like erthritol, etc.

(I like Truvia in packets for this - 2 packets)

Pinch of Sea Salt

1/2 tsp Baking Powder

Directions: Melt cream cheese and butter for about 25 seconds in microwave. In a blender, combine eggs, baking powder, almond flour, cream, salt, and melted cream cheese and butter and blend until all mixed together. (Mix will be thin) 

Pour small amounts of batter onto a preheated, greased griddle, on a medium-low setting. Flip pancakes when edges are set and bubbles have formed into each pancake. Cook a minute or two longer and repeat until all the batter is cooked. Serve warm with butter, whipped cream and a few berries or keto-friendly syrup, etc.  This makes about 12-15 small pancakes (about 3 inches in diameter.) Enjoy!
