Pigs in a Blanket

Ingredients:(For Crust)

3 C Mozzarella Cheese, shredded

4 oz Cream Cheese (1/2 brick)

1 1/2 C Almond Flour

1 tsp Xanthan Gum

(I prefer Bob's Red Mill)

1 egg, room temp, beaten

2 tsp Yeast

2 Tbsp Warm Water

2 Tbsp Melted Butter

6 Nitrate-free Hotdogs or Sausage

Directions: 

Preheat oven to 375°.  In a teacup, place the yeast and stir the hot water into the yeast. Set aside until it blossoms. In a microwave, melt the 2 cheeses together at 40 second intervals, mixing together after each heating and repeat until cheese is well-melted. In a bowl, combine the almond flour & xanthan gum. Whisk together. Add the egg, yeast, and melted butter. Mix thoroughly. Add the melted cheeses and knead together until well mixed. (Can use a mixer with a dough hook, if desired.) Separate dough into 12 balls. Roll 6 out into round "snakes". Spiral-wrap each hot dog with a snake and place on a baking sheet with a silicone sheet or piece of parchment paper. Bake for 15 minutes until dough is cooked and browned. Serve with unsweetened ketchup and mustard, if desired. (Note: you will have 6 balls of dough left. Place those on separate baking sheet (lined with parchment) and allow to rise slightly. Bake at the same temo for 15 minutes. Brush with melted butter and enjoy hot as a roll. or use as a sandwich bun later.
