Rock Fish in Lemon Butter Sauce

(Or Any White Fish or Scallops)

Ingredients:

4 Tbsp Butter (1/2 stick)

Juice of 1/2 Lemon

1/3 C Piñon Nuts

(Also known as pine nuts)

2-4 4 oz fish fillets

Sautèed  greens

(I like asparagus and Zucchini noodles (zoodles)

Lemon wedges for serving

Directions: 

In a large skillet, melt and slightly brown the butter over medium-low heat. Add lemon juice and piñon nuts. Place fish fillets into skillet and cook for 2 minutes on each side or until fish flakes easily with a fork. Do not over cook! (If desired, cover with a lid during the cooking process.)

Serve over the cooked greens and lemon wedges.

This recipe makes 2-4 servings. It is quick, easy and delicious!
